I've seen many a quiche recipe -- this is one of the simplest in time, effort, and ingredients. But, something about the mix makes this taste so good. And, even though I didn't grow up with this (it comes from my husband's mother), this is one of our comfort foods.

Ingredients

  • 1 package refrigerated pie crusts in disposable tins, deep dish
  • 1 pound breakfast sausage
  • 2 cups cheddar cheese, divided
  • 1 - green pepper, chopped
  • 1 - onion, chopped
  • 6 - eggs, divided
  • 1 can evaporated milk

How To Make quiche

  • Step 1
    Crumble and fry sausage completely. Divide the sausage between the two pies. Sprinkle some of the cheese in each pie, reserving most of it for the top. Divide the green pepper and onion between the two pies.
  • Step 2
    In a bowl, combine 3 eggs and ½ can of evaporated milk. Pour into one of the pies. Repeat this for the other pie. DO NOT DO ALL SIX EGGS AND ALL THE MILK AT THE SAME TIME!!!! It never works right. Divide the remaining cheese between the two pies, sprinkling over the egg mixture. Bake at 350* F. for 45 minutes.
