  • 1/4 c
    green onions, sliced
  • 2 Tbsp
  • 2 c
    mashed potatoes
  • 1 c
    american cheese, shredded
  • 3
    egg yolks
  • 1/3 c
  • 1/2 tsp
  • 3
    egg whites, stiffly beaten
  • 8 oz
    brown and serve sausage links

How to Make Puffed Potatoes and Sausage


  1. Preheat oven 375.
  2. Saute onion in butter till tender, but not browned.
  3. Stir in cooked onion and cheese into mashed potatoes.
  4. Beat egg yolks, milk and salt together; blend into potato mixture. Fold in beaten egg whites.
  5. Turn into a 2-quart casserole. Arrange sausage links on top. Bake uncovered till set; about 45 minutes.
