    green onions, chopped
  • 2 Tbsp
  • 1
    egg, hard boiled
  • 2 Tbsp
  • 6 slice
  • 1/2 c
    sour cream
  • 1/2 tsp
    parsley, fresh and chopped
  • 3/4 c
    cheddar cheese, shredded
  • 3/4 c
    bread crumbs, buttered
  • pinch
  • pinch
  • 2 medium
    potatoes, peeled, cooked and sliced
  • 6 small
    graham cracker tarts

How to Make Potato and Egg Casserole


  1. Saute onions in butter; blend in flour and cook at medium heat.
  2. Stir in sour cream, cheese, parsley, salt and pepper.
  3. Layer potato slices in tarts; spread 1/2 the sour cream mixture over potatoes.
  4. Layer tomato slices and egg slices in crust.
  5. Layer the rest of the potatoes and sour cream mixture on top; sprinkle with bread crumbs and bake for 40-45 minutes at 350.
  6. Before serving decorate with tomato and egg wedges.
