Ingredients

  • 4 - green onions, chopped
  • 2 tablespoons butter
  • 1 - egg, hard boiled
  • 2 tablespoons flour
  • 6 slices tomato
  • 1/2 cup sour cream
  • 1/2 teaspoon parsley, fresh and chopped
  • 3/4 cup cheddar cheese, shredded
  • 3/4 cup bread crumbs, buttered
  • pinch salt
  • pinch pepper
  • 2 medium potatoes, peeled, cooked and sliced
  • 6 small graham cracker tarts

How To Make potato and egg casserole

  • Step 1
    Saute onions in butter; blend in flour and cook at medium heat.
  • Step 2
    Stir in sour cream, cheese, parsley, salt and pepper.
  • Step 3
    Layer potato slices in tarts; spread 1/2 the sour cream mixture over potatoes.
  • Step 4
    Layer tomato slices and egg slices in crust.
  • Step 5
    Layer the rest of the potatoes and sour cream mixture on top; sprinkle with bread crumbs and bake for 40-45 minutes at 350.
  • Step 6
    Before serving decorate with tomato and egg wedges.
