parsley, fresh and chopped

cheddar cheese, shredded
3/4 c
bread crumbs, buttered
pinch
salt
pinch
pepper
2 medium
potatoes, peeled, cooked and sliced
6 small
graham cracker tarts

How to Make Potato and Egg Casserole

Step-by-Step

  • 1Saute onions in butter; blend in flour and cook at medium heat.
  • 2Stir in sour cream, cheese, parsley, salt and pepper.
  • 3Layer potato slices in tarts; spread 1/2 the sour cream mixture over potatoes.
  • 4Layer tomato slices and egg slices in crust.
  • 5Layer the rest of the potatoes and sour cream mixture on top; sprinkle with bread crumbs and bake for 40-45 minutes at 350.
  • 6Before serving decorate with tomato and egg wedges.
