Ingredients For potato and egg casserole

4green onions, chopped

2 mdpotatoes, peeled, cooked and sliced

pinchpepper

pinchsalt

3/4 cbread crumbs, buttered

3/4 ccheddar cheese, shredded

1/2 tspparsley, fresh and chopped

1/2 csour cream
-
6 slicetomato
-
2 Tbspflour

1egg, hard boiled
-
2 Tbspbutter
-
6 smgraham cracker tarts
How To Make potato and egg casserole

1Saute onions in butter; blend in flour and cook at medium heat.

2Stir in sour cream, cheese, parsley, salt and pepper.

3Layer potato slices in tarts; spread 1/2 the sour cream mixture over potatoes.

4Layer tomato slices and egg slices in crust.

5Layer the rest of the potatoes and sour cream mixture on top; sprinkle with bread crumbs and bake for 40-45 minutes at 350.

6Before serving decorate with tomato and egg wedges.
