How to Make Play it "agEIN" Lo Mein

Step-by-Step

  1. preheat oven to 450 degrees and using a biscuit cutter cut bread into circles that will fit flatly into your ramekins
  2. boil ramen in 2 cups water until just tender, drain and set aside
  3. sautee meat until just browned, add garlic, onion, celery and sweat until tender
  4. add ramen, ramen seasoning pkt and mushrooms and cook until just heated through
  5. slide it all to the side of the skillet and put a small dab of butter for each bread circle and brown the bread on each side
  6. spray ramekins and place a bread round in the bottom of each fill 3/4 full with the noodle mixture and top with one raw egg
  7. place in a bain marie (ramekins in a shallow baking dish with hot water in it) bake until the eggs are the way you like them somewhere between 10-20 minutes (the picture is before I added the boiling water to the pan, YES, even with the parchment paper, we have really hard water and I wanted it to absorb the setaments)
