You can use 12 slices of crust removed, cubed bread instead of hash browns or grated carrots instead of the bell peppers. The nice thing is just throwing it in your pre-heated oven first thing in the morning and in less than an hour its all done

Ingredients For overnight breakfast casserole

  • 12
    eggs
  • 1 c
    milk
  • 2 c
    shredded cheddar cheese
  • 1 md
    onion, finely chopped
  • 1/2
    green pepper, diced
  • 1/2
    red bell pepper, diced
  • 1 lb
    breakfast meat, cooked
  • 2 lb
    shredded hash browns
  • salt & pepper eggs & potatoes

How To Make overnight breakfast casserole

    Mix eggs, milk & cheese, set aside. Dice onion & peppers- cook to soften Cook breakfast meat

    Put seasoned hash browns in a lightly sprayed 9 x 13 baking dish Combine other ingred. & pour over hash browns Season w/salt & pepper. Cover & refrigerate overnight

    Bake @ 350 for 45-55 minutes Knife in center should be clean when tested. Serve You can also serve it with shredded lettuce, sour cream & salsa
