You can use 12 slices of crust removed, cubed bread instead of hash browns or grated carrots instead of the bell peppers. The nice thing is just throwing it in your pre-heated oven first thing in the morning and in less than an hour its all done

- 12 - eggs
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1 medium onion, finely chopped
- 1/2 - green pepper, diced
- 1/2 - red bell pepper, diced
- 1 pound breakfast meat, cooked
- 2 pounds shredded hash browns
- - salt & pepper eggs & potatoes
How To Make overnight breakfast casserole

Step 1Mix eggs, milk & cheese, set aside. Dice onion & peppers- cook to soften Cook breakfast meat

Step 2Put seasoned hash browns in a lightly sprayed 9 x 13 baking dish Combine other ingred. & pour over hash browns Season w/salt & pepper. Cover & refrigerate overnight

Step 3Bake @ 350 for 45-55 minutes Knife in center should be clean when tested. Serve You can also serve it with shredded lettuce, sour cream & salsa
