Ingredients

  • 1 1/2 - loaves french bread, cut into cubes
  • 4 ounces cream cheese
  • 1 tablespoon milk
  • 1/2 cup powdered sugar
  • 1 cup blueberries
  • 1 cup milk
  • 5 - eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 cup maple syrup
  • BLUEBERRY SYRUP
  • 1 cup water
  • 2 tablespoons corn starch
  • 1/2 cup sugar
  • 1 cup blueberries

How To Make overnight blueberry french toast casserole

  • Step 1
    Spray 2 quart casserole dish with nonstick spray.
  • Step 2
    Spread half of the bread cubes in bottom of dish.
  • Step 3
    Mix together cream cheese, 1 tablespoon milk and powdered sugar until well combined. Pour over bread.
  • Step 4
    Sprinkle with blueberries.
  • Step 5
    Add remaining bread cubes.
  • Step 6
    Combine 1 cup milk, eggs, vanilla, cinnamon and syrup. Pour over bread cubes.
  • Step 7
    Cover with foil and refrigerate overnight.
  • Step 8
    Let stand at room temperature for 30 minutes.
  • Step 9
    Preheat oven to 375 degrees. Bake covered 45 minutes. Remove foil and bake 30 minutes longer.
  • Step 10
    During last 10 minutes of baking prepare the Blueberry Syrup. In saucepan combine water, corn starch and sugar. Heat to a simmer. Add blueberries and continue to simmer for 10 minutes.

    Serve casserole with warm syrup.
