Old-Fashioned Buttermilk Biscuits

Southerners know their biscuits and we loved these. These homemade buttermilk biscuits are the easiest we've ever made. They are very light and fluffy, almost air-like. As they're baking, the smell is amazing. A big smear of butter and these are melt in your mouth good. Top with your favorite jam. Sausage gravy wouldn't be too bad either.
Note: This is definitely more of a savory biscuit. We liked how the biscuits contrast with the sweet jam. If you're concerned about the salt in this recipe, it can be cut back to 1 teaspoon.

1/3 cshortening (the buttermilk makes them very moist)
