Old-Fashioned Buttermilk Biscuits

Southerners know their biscuits and we loved these. These homemade buttermilk biscuits are the easiest we've ever made. They are very light and fluffy, almost air-like. As they're baking, the smell is amazing. A big smear of butter and these are melt in your mouth good. Top with your favorite jam. Sausage gravy wouldn't be too bad either.
Note: This is definitely more of a savory biscuit. We liked how the biscuits contrast with the sweet jam. If you're concerned about the salt in this recipe, it can be cut back to 1 teaspoon.
Ingredients

2 call-purpose flour

1 Tbspbaking powder

2 Tbspsugar

1 tspsalt

1/4 tspbaking soda

1 cbuttermilk

1/3 cshortening (the buttermilk makes them very moist)
How to Make Old-Fashioned Buttermilk Biscuits
- Mix in dry ingredients.
- Cut in shortening.
- Add buttermilk a little at a time stirring as you go. Stir until it clings together.
- Knead gently 25 to 30 times.
- Roll out to a 1/2 inch.
- Cut biscuits to desired size. (I sometimes make them very large using my Blue Metal Coffee Cup for camping as my cutter.)
- Place on an ungreased sheet.
- Bake for 15 minutes at 450 degrees until brown.
- These are best used within a few days. Keep refrigerated. Makes nice breakfast sandwiches with fried bacon/sausage, eggs, and cheese!
