this is one of my man's favorite dishes, he asks for it often.

Ingredients

  • 1
    link of your favorite bratwurst,( you may use crumbled breakfast sausage if you like)
  • 2
    potatoes, washed and diced with peel left on
  • 1/4 c
    each onion and green bell pepper
  • 2
    eggs
  • 2 slice
    american cheese
  • 1/2 tsp
    each seasoning salt and black pepper

How to Make My Breakfast Special

Step-by-Step

  1. In a large skillet, drizzle 1 to 2 tablespoons cooking oil or bacon drippings.
  2. Over medium high heat, place potatoes and start frying. while potatoes are starting to cook, remove casing from brat and crumble meat into skillet.
  3. add onions, peppers. continue cooking.turn heat down and place a lid over all and simmer until potatoes are tender. stir occassionally.
  4. remove lid and crisp up potatoes.(turn heat up to med high) salt and pepper contents. move potato mixture to one side of skillet. place cheese slices over top.
  5. on empty side of skillet, drop in eggs and cook to your preference.
  6. to plate up, place potato mixture on bottom, top with your eggs and serve with hot buttered toast.
