Ingredients

  • MINT BUTTER
  • 2 sticks butter
  • 2 tablespoons cane sugar
  • 1 tablespoon mint extract
  • FRENCH TOAST CASSEROLE
  • 6 large eggs
  • 1 cup whole milk
  • 1 packet instant vanilla pudding mix
  • 1/2 cup Torani chocolate mint syrup
  • 2 teaspoons mint extract
  • 3 drops green food coloring
  • 1 pound Italian bread
  • 1 cup milk chocolate chips
  • CHOCOLATE MINT GANACHE
  • 1 cup heavy cream
  • 8 Andies candies
  • 3/4 cup hot fudge sauce
  • 3 tablespoons Torani chocolate mint syrup

How To Make mint butter french toast casserole

  • Step 1
    Preheat oven to 350 degrees F. Coat a 9 x 13-inch baking dish with cooking spray.
  • Step 2
    To make mint butter, add butter, cane sugar, and mint extract to a medium bowl. Whisk well for 3 minutes until blended. Set aside.
  • Step 3
    To make the French toast casserole, crack the eggs into a large mixing bowl. Combine milk, 4 tablespoons of mint butter, pudding mix, chocolate mint syrup, mint extract, and green food coloring.

    Whisk together for 4 minutes until mixed and blended. Add chocolate chips. Set aside.
  • Step 5
    Cut the loaf of Italian bread into cubes of approximately one and a half inches.
  • Step 6
    Add the bread cubes to the egg mixture. Use a rubber spatula to stir until all of the bread cubes are coated in the egg mixture.
  • Step 7
    Scoop approximately half the bread-egg mixture into a greased 9 x 13-inch baking dish and spread evenly. Spoon 2 tablespoons of mint butter on top.
  • Step 8
    Cover with aluminum foil. Bake for 30 minutes.
  • Step 9
    Remove the foil and continue baking for 15 minutes, uncovered, to crisp up the top.
  • Step 10
    To make chocolate mint ganache, melt the remaining mint butter in a medium saucepan over medium heat. Combine heavy cream, Andies candies, hot fudge sauce, and chocolate mint syrup, stirring constantly for 5 minutes until thickened. Remove from heat and cool completely for 5 minutes.
  • Step 11
    Drizzle over warm French toast casserole.
