It was quite a few years ago when I developed this recipe. My husband and I have enjoyed Mexican food and wanted to do something different for our breakfast. We usually would do this on a Sunday morning before we went to Mass.

Ingredients
- 1/4 cup spanish onion chopped
- 1 - anaheim pepper seeded and diced
- 1/2 small sweet bell pepper seeded and diced
- 2 - tomatillos diced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lime juice
- 1/2 cup fresh tomato diced
- 1 tablespoon fresh cilantro chopped
- 6 large eggs
- 1/4 cup half and half
- 1/2 cup pepper jack cheese grated
- - black pepper to taste
How To Make mexican style omelet

Step 1First Step procedure: Sauté the vegetables in the olive oil until tender.

Step 2Second Step procedure: Add the tomatoes, cilantro and lime juice. Chill.

Step 3Third Step procedure: Combine the eggs and half and half. Mix thoroughly.

Step 4Pour the beaten egg mixture in a non-stick pan. Cook over medium heat, using a spatula to gently move the eggs around the pan, allowing them to cook evenly, until eggs are set. Add the cooked vegetables to the omelet and top with cheese. Season with pepper. Fold the omelet in half and serve family style.
