It was quite a few years ago when I developed this recipe. My husband and I have enjoyed Mexican food and wanted to do something different for our breakfast. We usually would do this on a Sunday morning before we went to Mass.

Ingredients For mexican style omelet

1/4 cspanish onion chopped

1anaheim pepper seeded and diced

1/2 smsweet bell pepper seeded and diced

2tomatillos diced
-
2 Tbspextra virgin olive oil

1 Tbspfresh lime juice
-
1/2 cfresh tomato diced
-
1 Tbspfresh cilantro chopped

6 lgeggs
-
1/4 chalf and half
-
1/2 cpepper jack cheese grated
-
black pepper to taste
How To Make mexican style omelet

1First Step procedure: Sauté the vegetables in the olive oil until tender.

2Second Step procedure: Add the tomatoes, cilantro and lime juice. Chill.

3Third Step procedure: Combine the eggs and half and half. Mix thoroughly.

4Pour the beaten egg mixture in a non-stick pan. Cook over medium heat, using a spatula to gently move the eggs around the pan, allowing them to cook evenly, until eggs are set. Add the cooked vegetables to the omelet and top with cheese. Season with pepper. Fold the omelet in half and serve family style.
