This is another favorite at my house. Easy to make and never any leftovers!

Ingredients

  • 4 cups white bread, in 1" cubes
  • 4 ounces cheddar cheese, shredded
  • 4 ounces swiss cheese, shredded
  • 1/4 cup green onions, chopped
  • 1/4 cup green bell pepper, diced
  • 1/2 cup tomatoes, seeded and diced
  • 10 - eggs, beaten
  • 4 cups milk
  • 1 tablespoon parsley, chopped
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound bacon, cooked and crumbled

How To Make make-ahead brunch casserole

  • Step 1
    Generously grease 13 x 9-inch pan.
  • Step 2
    Arrange bread cubes in bottom of dish.
  • Step 3
    Layer cheese, green onions, green pepper, mushrooms and tomatoes on top of bread.
  • Step 4
    In large bowl, combine eggs, milk, and seasonings; mix well.
  • Step 5
    Pour egg mixture over bread and sprinkle bacon evenly over top.
  • Step 6
    Cover and refrigerate overnight.
  • Step 7
    Heat oven to 325. Bake uncovered 50 to 60 minutes or until center is set.
  • Step 8
    Stand 10 minutes before serving.
