My neighbor, Lupita, brought some of this delicious dish over this morning. We ate it with over-easy eggs. Yum! A definite Mexican comfort food.

Ingredients

  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 medium green or red pepper, chopped
  • 2 cans diced tomatoes with chiles, undrained
  • 4 cups tortilla chips, about 6 ounces
  • or 4 tortillas, crisped in oven and cut into wedges
  • 1/2 cup chicken or beef broth
  • 1 cup Mexican style cheese, shredded
  • 1 tablespoon cilantro, minced
  • salt and pepper, to taste
  • OPTIONAL GARNISHES
  • Tajin seasoning, sour cream, diced avocado, sliced red onion, fried egg

How To Make lupita's chilaquiles

  • Step 1
    Spray a pan with your favorite pan spray. Cook onions and peppers until softened. Add garlic, cook for 1 more minute. Add tomatoes and cilantro, then stir to mix, bring to a boil, then take off the heat.
  • Step 2
    Spray an 8x8-inch casserole with pan spray. Put 1/2 of the chips or tortilla wedges on the bottom, add half of the broth, half of the tomato mixture, and half of the cheese. Repeat layers.
  • Step 3
    Bake at 350 degrees F for 15 minutes, or until cheese is melted. Serve with any or all optional garnishes.
