We had a fishing lodge in Alaska and fed 20+ people breakfast lunch and dinner so we had to figure out recipes that were tasty and easy to do . This Egg casserole filled the bill! It's good hot or cold...and is a hit whenever or wherever I've served it.

Ingredients

  • 8
    eggs
  • 1/2 c
    flour
  • 1 tsp
    soda
  • 3/4 tsp
    salt
  • 1/2 c
    chopped onions
  • 3 c
    grated cheese of your choice
  • 1 1/2 can(s)
    cottage cheese your choice
  • 2 can(s)
    chopped green chilies
  • BAKED EGG CASSEROLE

How to Make Lorie's Baked Egg Casserole

Step-by-Step

  1. Mix all the ingredients together in a large bowl and pour into a 9x11 pan coated with Pam. Bake for 40-45 minutes or until top is slightly browned. You can add pre cooked bacon, ham, sausage to the mix if you like. This can be made up the night before, just refrigerate, then pop it in the oven at 350 degrees for 40-45 minutes.. Let it set for a few minutes before cutting into squares to serve. If you have any left overs from breakfast it makes a great cold snack or appetizer. If you like it spicy add some salsa, or hot sauce. Enjoy!
