I needed something that would be easy to transport for a ladies brunch. Easy to warm up, and very pretty too!

Ingredients
- 1 tablespoon oil
- 4 cups hash brown potatoes, frozen
- 1/2 package thick sliced bacon
- 1 bunch green onions
- 1 - red pepper
- 1 - green pepper
- 12 large eggs
- 1 cup milk
- 1 - 1/2 cups shredded cheese (your choice)
- - salt and pepper to taste
- - additional seasonings to taste
How To Make egg bake

Step 1Brush oil into a 9x13 baking dish

Step 2Thaw frozen hash browns in microwave then spread on bottom of baking dish. Bake for 20 minutes at 350 then set aside

Step 3Cut bacon into small pieces and fry until crisp then drain and set aside

Step 4Chop vegetables and sprinkle evenly over hash browns

Step 5Beat eggs and milk then add cheese, seasoning, and bacon bits

Step 6Pour egg mixture over vegetables

Step 7Bake for 45 minutes at 350 or until eggs are firm. Cover with foil during baking if edges start to brown

Step 8Cool slightly then cut and serve
