  • 1/2 c
    chopped onion
  • 2 Tbsp
  • 2 Tbsp
    all purpose flour
  • 1 1/4 c
  • 1 c
    shredded cheese
  • 6
    hard boiled eggs, sliced
  • 1 1/2 c
    crushed potato chips
  • 10 slice
    bacon, fried and crumbled

How to Make Kentucky Derby Eggs


  1. Preheat oven to 350 degrees.
  2. Cook onion in butter until tender. Blend in flour and add milk. Cook until thick. Add cheese and stir until melted.
  3. In a 10 x 6 inch baking dish, layer half the eggs, cheese sauce, potato chips and bacon. Repeat layers. Bake 30 minutes.
