Ingredients
- 8 ounces package sweet italian sausage
- 8 - green onions, sliced (1 cup)
- 1/2 teaspoon salt
- 2 - zucchini diced (3 cups)
- 1/2 teaspoon pepper
- 7 ounces jar roasted red bell pepper, drain and chop
- 16 ounces italian bread loaf, cut into 1" cubes (8 cups)
- 8 ounces shredded sharp cheddar (2 cups)
- 6 large eggs
- 1 1/2 cups milk
How To Make italian brunch casserole

Step 1Remove and discard casings from sausage. Cook in large skillet, stirring until sausage crumbles and is no longer pink. Drain. Add onion, zucchini, salt and pepper to skillet. Saute 4 min or until vegetables are tender, stir in peppers. Drain and cool. Spread 4 c bread crumbs in lightly greased 9x13. Top with half sausage mix and half cheese. Repeat. Whisk together eggs and milk, pour over bread. Cover and chill 8 hours. Bake, covered, at 325 degrees for 1 hour or until bubbly and hot.
