individual frittata

I make these for hubby on Sunday, so he may have one each day to take to work for breakfast. Any favorite veggie can be added, shredded potatoes would be good to add as well. Also sausage instead of bacon.

Ingredients

  • 2 tablespoons olive oil
  • 1/2 medium red onion
  • 1/3 medium red bell pepper
  • 1/3 medium green bell pepper
  • 1/3 medium yellow bell pepper
  • 1/3 medium orange bell pepper
  • 9 large eggs
  • 1 pound bacon
  • 1/4 teaspoon black pepper
  • 3/4 teaspoon salt
  • 1/3 cup milk
  • 1 tablespoon basil
  • 1 tablespoon parsley
  • 1 cup cheese, shredded
  • 1 clove garlic

How To Make individual frittata

  • Step 1
    Grease a large sized muffin tin, set aside. Preheat oven to 375 degrees F.
  • Step 2
    Heat oil in a 10-inch, oven-safe skillet or sauté pan. Add onion and peppers; sauté over medium heat 5 minutes, stirring frequently.Add garlic, and sauté 1 additional minute. Remove vegetable mixture from heat.
  • Step 3
    Combine eggs, milk, salt, pepper, basil, parsley in a large bowl, stirring with a whisk until well mixed; set aside. Add vegetables to egg mixture in bowl. Stir in cheese.
  • Step 4
    Divide among a large muffin tin, I get 6 nice size individual frittatas from this recipe. Bake at 375 degrees for 15-20 minutes, or until cooked through.
  • Step 5
    Remove frittata from oven. Cool a few minutes and then remove from tin.
