Left over cornbread or corn muffins fresh tomatoes, good sliced breakfast sausage, eggs, cheese, wow you can't go wrong, kids and adults alike will love these little gems!

Ingredients

  • 1 slice left over cornbread or corn muffin
  • 1 - egg per person
  • 1 slice breakfast sausage per person
  • 1 slice fresh tomato per person
  • 1 1/2 tablespoons heavy cream
  • 1 tablespoon cheddar cheese, shredded per person
  • Sprinkle - coarse salt and fresh black pepper
  • - butter for each ramekin

How To Make individual breakfast casseroles

  • Step 1
    Preheat oven to 400. Brown slice(s) of breakfast sausage
  • Step 2
    Butter individual ramekins, and sprinkle 1tsp crumbled cornbread in bottom.
  • Step 3
    Add 1 slice of tomato to each ramekin and sprinkle 1tsp crumbled cornbread on top.
  • Step 4
    Add 1 slice of browned breakfast sausage to each ramekin and sprinkle 1tsp crumbled cornbread on top
  • Step 5
    Crack 1 egg in each ramekin and add 1 1/2 tablespoon of heavy cream sprinkle with salt, pepper and shredded cheddar cheese
  • Step 6
    Set ramekin(s) in water bath and bake at 400 for 15min or till yoke is desired firmness. Enjoy!!!
