impossible brunch pie

My grandmother used to make this almost every Sunday. Even the grandkids that didn't like their green veggies loved her brunch pie. I've also tried substituting the broccoli and spinach with cooked asparagus spears and it was delicious.

Ingredients

  • 1 package (10 oz) frozen chopped broccoli or chopped spinch
  • 1 cup sour cream
  • 1 cup creamed cottage cheese
  • 1/2 cup Bisquick baking mix
  • 1/4 cup butter, melted
  • 2 - eggs
  • 1 - tomato, peeled and thinly sliced
  • 1/2 cup grated parmesan cheese

How To Make impossible brunch pie

  • Step 1
    Heat oven to 350.
  • Step 2
    Grease pie plate.
  • Step 3
    Spread broccoli or spinach in plate.
  • Step 4
    Beat sour cream, cottage cheese, bisquick mix, butter and eggs until smooth approximately 15 seconds in blender on high or 1 minute with a beater.
  • Step 5
    Pour into pie plate.
  • Step 6
    Top with tomatoes; sprinkle with parmesan cheese.
  • Step 7
    Bake until knife inserted between center and edge comes out clean.
  • Step 8
    Cool 5 minutes before serving.
