I have been trying to get back to basics in my cooking. That's using fresh foods, vegetables, fruits and meats from the local butcher and ranches. I don't mind canning and freezing because it keeps everything as close to fresh as possible without buying "fresh" from other countries and having them ripened using methane gas to do so. The sausage is best when you use as much fresh ingredients as possible. You have the ability to spice it however you like and adjust them to fit your taste. This recipe freezes well and holds flavor!

Ingredients

  • 15 pounds pork, cut up (boston butt is best, it's fatty)
  • 4 tablespoons salt
  • 3 tablespoons sage
  • 4 tablespoons red peppers
  • 1 tablespoon black pepper
  • 3 tablespoons hot sauce, optional

How To Make homemade country sausage

  • Step 1
    Mix all ingredients really well and then grind in a sausage grinder.
  • Step 2
    Once complete, divide up and freeze.
