We just love it as is. You can use whatever meat and veggies your family likes and add salt and pepper to taste. Sausage and/or bacon would work as well. There are endless possibilities to try.

Ingredients
- 1/2 pound lean ground beef
- 2 slices hard salami, diced
- 2 slices sandwich pepperoni, diced
- 1/4 cup diced onion
- 1 - raw carrot diced
- 1/2 cup snipped fresh spinach
- 1/2 stick butter
- 5 slices sandwich bread
- 8 - eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
How To Make hearty brunch casserole

Step 1Preheat oven to 375°

Step 2Brown ground beef and drain. Add salami, pepperoni, carrot and onion - then mix well.

Step 3Melt the butter and coat the bottom of the 13x9 pan. Lay the bread slices on top of the melted butter to form the bottom layer

Step 4Sprinkle the meat/veggie mixture on top of the bread, then the spinach.

Step 5Beat the eggs and milk with a fork until well combined then gently pour over the mixture in the pan then top with shredded cheddar

Step 6Bake for 20 minutes at 375°. Cut into 8 servings and ENJOY.
