We just love it as is. You can use whatever meat and veggies your family likes and add salt and pepper to taste. Sausage and/or bacon would work as well. There are endless possibilities to try.

Ingredients

  • 1/2 pound lean ground beef
  • 2 slices hard salami, diced
  • 2 slices sandwich pepperoni, diced
  • 1/4 cup diced onion
  • 1 - raw carrot diced
  • 1/2 cup snipped fresh spinach
  • 1/2 stick butter
  • 5 slices sandwich bread
  • 8 - eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese

How To Make hearty brunch casserole

  • Step 1
    Preheat oven to 375°
  • Step 2
    Brown ground beef and drain. Add salami, pepperoni, carrot and onion - then mix well.
  • Step 3
    Melt the butter and coat the bottom of the 13x9 pan. Lay the bread slices on top of the melted butter to form the bottom layer
  • Step 4
    Sprinkle the meat/veggie mixture on top of the bread, then the spinach.
  • Step 5
    Beat the eggs and milk with a fork until well combined then gently pour over the mixture in the pan then top with shredded cheddar
  • Step 6
    Bake for 20 minutes at 375°. Cut into 8 servings and ENJOY.
