This healthy breakfast quiche is fast and easy, since it uses a whole wheat tortilla instead of a pastry crust. If you wish to make it even lighter, you can omit the tortilla and make it as a crustless quiche. The ingredients can be mixed and matched as desired. Use other vegetables, omit the turkey sausage, use ham or bacon instead -- you get the picture. Use what's in the fridge and you'll be pleased with the results.

Ingredients

  • 1 soft, whole wheat tortilla, large
  • 2 breakfast turkey sausages
  • 2 teaspoons vegetable oil
  • 4 eggs
  • 1/2 cup skim milk
  • 1/2 onion, chopped
  • 1 bell pepper, chopped
  • 1 tomato, chopped
  • 1 cup broccoli, chopped
  • 1/2 cup grated parmesan or mozzarella cheese
  • 1/2 cup breadcrumbs or panko
  • salt to taste
  • pepper to taste
  • cooking spray, optional

How To Make healthy breakfast quiche

  • Step 1
    Preheat oven to 350F
  • Step 2
    Spray pie pan with cooking spray OR grease lightly with oil. Place large tortilla in pie pan, arranging it to form a crust.
  • Step 3
    Remove sausage meet from casings and crumble.
  • Step 4
    Heat oil in skillet. Add sausage meat and vegetables and cook, stirring, until done.
  • Step 5
    In separate bowl, whisk eggs and milk together until well mixed. Add cheese, breadcrumbs and salt and pepper. Stir to blend.
  • Step 6
    Add cooked vegetable mixture to egg mixture and stir.
  • Step 7
    Pour filling into pie plate. Place in heated oven and cook for approximately 25 minutes. Remove from oven and let sit for a few minutes before serving.
