healthy breakfast quiche
This healthy breakfast quiche is fast and easy, since it uses a whole wheat tortilla instead of a pastry crust. If you wish to make it even lighter, you can omit the tortilla and make it as a crustless quiche. The ingredients can be mixed and matched as desired. Use other vegetables, omit the turkey sausage, use ham or bacon instead -- you get the picture. Use what's in the fridge and you'll be pleased with the results.

Ingredients
- 1 soft, whole wheat tortilla, large
- 2 breakfast turkey sausages
- 2 teaspoons vegetable oil
- 4 eggs
- 1/2 cup skim milk
- 1/2 onion, chopped
- 1 bell pepper, chopped
- 1 tomato, chopped
- 1 cup broccoli, chopped
- 1/2 cup grated parmesan or mozzarella cheese
- 1/2 cup breadcrumbs or panko
- salt to taste
- pepper to taste
- cooking spray, optional
How To Make healthy breakfast quiche

Step 1Preheat oven to 350F

Step 2Spray pie pan with cooking spray OR grease lightly with oil. Place large tortilla in pie pan, arranging it to form a crust.

Step 3Remove sausage meet from casings and crumble.

Step 4Heat oil in skillet. Add sausage meat and vegetables and cook, stirring, until done.

Step 5In separate bowl, whisk eggs and milk together until well mixed. Add cheese, breadcrumbs and salt and pepper. Stir to blend.

Step 6Add cooked vegetable mixture to egg mixture and stir.

Step 7Pour filling into pie plate. Place in heated oven and cook for approximately 25 minutes. Remove from oven and let sit for a few minutes before serving.
