We like breakfast casseroles around here. Takes long enough for me to be able to actually eat them, and the kids are hungry enough that they actually eat.

Ingredients

  • 10 - frozen hashbrowns
  • 12 large eggs
  • 1 teaspoon yellow mustard
  • 2 pinches ground white pepper
  • 1/2 teaspoon salt
  • 1/2 package bacon
  • 1/2 cup sliced green onions
  • 2 cups shredded cheddar

How To Make hashbrown casserole

  • Step 1
    Preheat oven to 450* and spray 11x15" baking dish with nonstick spray
  • Step 2
    Cook bacon until it is crisp, then cut into bits. Place hashbrowns in baking dish, you will have 2 rows of 5. Crack eggs into a medium bowl and whisk in mustard, pepper and salt.
  • Step 3
    Pour eggs over hashbrowns, sprinkle with onions and bacon, then cover with the shredded cheese.
  • Step 4
    Bake for 20-30 minutes.
