We like breakfast casseroles around here. Takes long enough for me to be able to actually eat them, and the kids are hungry enough that they actually eat.

Ingredients

  • 10
    frozen hashbrowns
  • 12 large
    eggs
  • 1 tsp
    yellow mustard
  • 2 pinch
    ground white pepper
  • 1/2 tsp
    salt
  • 1/2 pkg
    bacon
  • 1/2 c
    sliced green onions
  • 2 c
    shredded cheddar

How to Make Hashbrown casserole

Step-by-Step

  1. Preheat oven to 450* and spray 11x15" baking dish with nonstick spray
  2. Cook bacon until it is crisp, then cut into bits.
    Place hashbrowns in baking dish, you will have 2 rows of 5.
    Crack eggs into a medium bowl and whisk in mustard, pepper and salt.
  3. Pour eggs over hashbrowns, sprinkle with onions and bacon, then cover with the shredded cheese.
  4. Bake for 20-30 minutes.
