hash brown and country gravy casserole

This is my version of a recipe I found on the back of a country gravy mix package. I made it for our community coffee and it was gone before I got back to take a picture. I also got quite a few requests to repeat the casserole again soon.

Ingredients

  • 1 package country gravy mix (makes 2 cups)
  • 4 cups frozen diced potatoes, defrosted
  • 1 tablespoon vegetable oil
  • 1 pound mild country sausage, browned & crumbled
  • 2 large eggs, beaten
  • 1-1/2 cup shredded cheddar cheese

How To Make hash brown and country gravy casserole

  • Step 1
    Prepare the sausage gravy according to package directions. Take off the heat to cool. (Be sure the mix makes 2 Cups of gravy)
  • Step 2
    Heat oil in large skillet; brown potatoes, stirring frequently to get a nice golden brown.
  • Step 3
    Brown the sausage well and break up into small pieces; drain well.
  • Step 4
    In 9X13" pan place potatoes; sprinkle the sausage over the potatoes;
  • Step 5
    Stir beaten eggs into the gravy; pour evenly over the sausage.
  • Step 6
    Bake at 350 degrees for 25-30 minutes until the center of casserole is hot. Sprinkle the cheese over the casserole and return to oven about 5 minutes, or until cheese is melted.
