This grits breakfast bake is a hearty breakfast casserole. It has thick and creamy grits on the bottom and is packed with smoky sausage. Then, it's topped with a layer of fluffy eggs and cheddar cheese. We imagine this being just as divine with any number of cheese combinations. A delicious breakfast option for a weekend or holiday breakfast.

Ingredients
- 2 1/2 cups water
- 3/4 cup quick grits
- 1 pound skinless smoked sausage
- 1 1/2 cups shredded sharp cheddar cheese, shredded
- 6 large eggs
- 1 can evaporated milk (12 oz)
- 1 teaspoon dry mustard
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 - 2 medium tomatoes, sliced
- 2 tablespoons chopped parsley
How To Make grits breakfast bake

Step 1Heat oven to 325 degrees F. Grease a 9X13 dish.

Step 2Bring water to a boil. Add 1 tsp salt and slowly stir in grits.

Step 3Reduce heat. Simmer for 4-5 minutes until thickened stirring frequently.

Step 4Stir in chopped smoked sausage and half of the sharp cheese.

Step 5Spoon into the dish and sprinkle with the remaining cheese.

Step 6Scramble eggs, evaporated milk, and spices.

Step 7Pour over the grits mixture. Bake for 50 - 60 minutes or until a knife inserted 1 1/2 inches from the side comes out clean.

Step 8Let stand for 10-15 minutes. Garnish with tomato and parsley.
