grilled cheese, potato and egg casserole
(2 RATINGS)
I made grilled cheese sandwiches for dinner, and ended up with one left over. The next morning I found it still sitting on the counter, wrapped in a paper towel. I couldn't just throw it away, so I got creative! The resulting casserole was surprisingly tasty. I served it with sausage and fresh fruit and it made one very satisfying meal!

How To Make grilled cheese, potato and egg casserole
-
Step 1Whisk together the eggs, onion, salt, pepper, and water.
-
Step 2Cut sandwich into small cubes.
-
Step 3Add sandwich cubes and potato shreds to egg mixture and mix lightly.
-
Step 4Pour into greased casserole dish (I use a 1 1/2 quart round casserole dish).
-
Step 5Cover and bake at 375 degrees for 40 minutes.
-
Step 6Remove cover, top with slices of cheddar cheese. (I use the thin slices for sandwiches. You could use 1/2 cup of shredded cheese instead.)
