I made grilled cheese sandwiches for dinner, and ended up with one left over. The next morning I found it still sitting on the counter, wrapped in a paper towel. I couldn't just throw it away, so I got creative! The resulting casserole was surprisingly tasty. I served it with sausage and fresh fruit and it made one very satisfying meal!

Ingredients

grilled cheese sandwich
6
eggs
1 c
shredded potatoes
1/2 tsp
salt
1/4 tsp
black pepper
1 Tbsp
dried, minced onion
2 slice
cheddar cheese
2 Tbsp
water

How to Make Grilled Cheese, Potato and Egg Casserole

Step-by-Step

  • 1Whisk together the eggs, onion, salt, pepper, and water.
  • 2Cut sandwich into small cubes.
  • 3Add sandwich cubes and potato shreds to egg mixture and mix lightly.
  • 4Pour into greased casserole dish (I use a 1 1/2 quart round casserole dish).
  • 5Cover and bake at 375 degrees for 40 minutes.
  • 6Remove cover, top with slices of cheddar cheese. (I use the thin slices for sandwiches. You could use 1/2 cup of shredded cheese instead.)
  • 7Return to oven, and bake uncovered until cheese melts, about 5-10 minutes.
