I made grilled cheese sandwiches for dinner, and ended up with one left over. The next morning I found it still sitting on the counter, wrapped in a paper towel. I couldn't just throw it away, so I got creative! The resulting casserole was surprisingly tasty. I served it with sausage and fresh fruit and it made one very satisfying meal!

Ingredients

  • 1 - grilled cheese sandwich
  • 6 - eggs
  • 1 cup shredded potatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon dried, minced onion
  • 2 slices cheddar cheese
  • 2 tablespoons water

How To Make grilled cheese, potato and egg casserole

  • Step 1
    Whisk together the eggs, onion, salt, pepper, and water.
  • Step 2
    Cut sandwich into small cubes.
  • Step 3
    Add sandwich cubes and potato shreds to egg mixture and mix lightly.
  • Step 4
    Pour into greased casserole dish (I use a 1 1/2 quart round casserole dish).
  • Step 5
    Cover and bake at 375 degrees for 40 minutes.
  • Step 6
    Remove cover, top with slices of cheddar cheese. (I use the thin slices for sandwiches. You could use 1/2 cup of shredded cheese instead.)
  • Step 7
    Return to oven, and bake uncovered until cheese melts, about 5-10 minutes.
