I made grilled cheese sandwiches for dinner, and ended up with one left over. The next morning I found it still sitting on the counter, wrapped in a paper towel. I couldn't just throw it away, so I got creative! The resulting casserole was surprisingly tasty. I served it with sausage and fresh fruit and it made one very satisfying meal!

Ingredients

  • 1
    grilled cheese sandwich
  • 6
    eggs
  • 1 c
    shredded potatoes
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1 Tbsp
    dried, minced onion
  • 2 slice
    cheddar cheese
  • 2 Tbsp
    water

How to Make Grilled Cheese, Potato and Egg Casserole

Step-by-Step

  1. Whisk together the eggs, onion, salt, pepper, and water.
  2. Cut sandwich into small cubes.
  3. Add sandwich cubes and potato shreds to egg mixture and mix lightly.
  4. Pour into greased casserole dish (I use a 1 1/2 quart round casserole dish).
  5. Cover and bake at 375 degrees for 40 minutes.
  6. Remove cover, top with slices of cheddar cheese. (I use the thin slices for sandwiches. You could use 1/2 cup of shredded cheese instead.)
  7. Return to oven, and bake uncovered until cheese melts, about 5-10 minutes.
