green eggs and sausage
This is a great recipe for someone on a low-carb diet, but we like them at any time!

Ingredients
- 1 large egg for each individual serving
- 1 slice sausage, chopped (i use frozen breakfast patties from wal-mart)
- 1 can chopped green chilies
- 1 cup grated cheddar cheese
How To Make green eggs and sausage

Step 1Heat oven to 350 degrees. Spray a muffin tin or butter well.

Step 2Put chopped sausage in the bottom of each muffin cup for the number of eggs you want to make. Crack an egg over the sausage. Put into oven and bake for 15 minutes. (More or less depending on how you like your eggs.)

Step 3Remove from oven and spoon green chilies over the eggs in the tin. (While I do this I usually run the spoon around the edge of the muffin cup to loosen the egg from the pan.) Sprinkle liberally with grated cheese. Put back in oven until cheese is melted and chilies are heated through. Remove from oven and place eggs on serving plates. Enjoy!!
