green breakfast burritoes
This is a favorite of my entire family. It is easy enough to double the recipe, and it reheats for a quick leftover when in a hurry.

Ingredients
- 12-18 - eggs
- small package jimmy dean sausage{ground)
- 2 small tomatoes
- 1/2 cup sour cream
- 1/2 can minced jalepenos
- 16 ounces monterey jack cheese
- small can sliced olives
- 1 package medium flour tortillas
- 1 can chili verde green sauce
How To Make green breakfast burritoes

Step 1Beat eggs and scramble in large skillet that has been coated with cooking spray. When slightly runny add Sour cream and finish cooking.

Step 2In another skillet brown package of Jimmy Dean sausage.

Step 3Dice tomatoes and add to sausage. Also add 1/2 can of minced jalepenos to the sausage.

Step 4Add sausage mixture to the egg mixture and blend well together. Spoon generously into warmed tortillas one at a time. Fold up the bottoms then roll into a burrito and place in a large baking pan that has been coated with cooking spray.

Step 5Place burritos close together with open end on the bottom of the pan.

Step 6Sprinkle sliced olives over top of burritos.

Step 7Pour can of green chili verde sauce over burritos and make sure they are completely covered.

Step 8Sprinkle cheese over all the top and loosely cover with foil.

Step 9Bake in 350 preheated oven for 25-30 minutes.
