Ingredients
- 1 large potato, diced
- 12 - eggs
- 1 cup reduced-fat, shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/4 teaspoon pepper
- 2 - 10 oz pkgs frozen, chopped spinach, thawed, squeezed dry
- 2 ounces canadien bacon, finely chopped
How To Make florentine casserole

Step 1Place potatoes in a microwaveable bowl. Cover w/ water. Cover bowl and microwave 5 min, drain. Heat oven to 375. Spray a 9" x 13" baking pan w/ cooking spray.

Step 2In lg bowl, whisk together eggs, cheese, salt, nutmeg and pepper. Stir in spinach and potatoes.

Step 3Pour egg mix into baking pan. Sprinkle w/ bacon. Bake 40 mins, or until set in center.
