I love this casserole w/ the spinach, it tastes sooo good!
I usually make it as a Sunday brunch meal.

Ingredients

1 large
potato, diced
12
eggs
1 c
reduced-fat, shredded cheddar cheese
1/2 c
grated parmesan cheese
1/2 tsp
salt
1/2 tsp
nutmeg
1/4 tsp
pepper

10 oz pkgs frozen, chopped spinach, thawed, squeezed dry
2 oz
canadien bacon, finely chopped

How to Make Florentine casserole

Step-by-Step

  • 1Place potatoes in a microwaveable bowl. Cover w/ water. Cover bowl and microwave 5 min, drain. Heat oven to 375. Spray a 9" x 13" baking pan w/ cooking spray.
  • 2In lg bowl, whisk together eggs, cheese, salt, nutmeg and pepper. Stir in spinach and potatoes.
  • 3Pour egg mix into baking pan. Sprinkle w/ bacon. Bake 40 mins, or until set in center.
