Ingredients
- 3/4 cup salsa
- 1 cup artichoke hearts, chopped
- 1/4 cup parmesan cheese, grated
- 1 cup monterey jack cheese, shredded
- 1 cup cheddar cheese, shredded
- 6 - eggs
- 8 ounces sour cream
How To Make fiesta omelet

Step 1Grease 10-inch quiche dish.

Step 2Spread salsa on the bottom.

Step 3Distribute chopped artichokes evenly over salsa.

Step 4Sprinkle parmesan cheese over the artichokes.

Step 5Sprinkle Monterrey jack and cheddar cheese over all.

Step 6Place eggs in blender or food processor and blend until smooth.

Step 7Add sour cream and blend.

Step 8Pour egg mixture over the cheeses.

Step 9Bake uncovered in 350F oven for 30-40 minutes or until set.
