How to Make Fiesta Omelet

Step-by-Step

  • 1Grease 10-inch quiche dish.
  • 2Spread salsa on the bottom.
  • 3Distribute chopped artichokes evenly over salsa.
  • 4Sprinkle parmesan cheese over the artichokes.
  • 5Sprinkle Monterrey jack and cheddar cheese over all.
  • 6Place eggs in blender or food processor and blend until smooth.
  • 7Add sour cream and blend.
  • 8Pour egg mixture over the cheeses.
  • 9Bake uncovered in 350F oven for 30-40 minutes or until set.
