Ingredients

  • 3/4 cup salsa
  • 1 cup artichoke hearts, chopped
  • 1/4 cup parmesan cheese, grated
  • 1 cup monterey jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 6 - eggs
  • 8 ounces sour cream

How To Make fiesta omelet

  • Step 1
    Grease 10-inch quiche dish.
  • Step 2
    Spread salsa on the bottom.
  • Step 3
    Distribute chopped artichokes evenly over salsa.
  • Step 4
    Sprinkle parmesan cheese over the artichokes.
  • Step 5
    Sprinkle Monterrey jack and cheddar cheese over all.
  • Step 6
    Place eggs in blender or food processor and blend until smooth.
  • Step 7
    Add sour cream and blend.
  • Step 8
    Pour egg mixture over the cheeses.
  • Step 9
    Bake uncovered in 350F oven for 30-40 minutes or until set.
