Works best to make it up the night before so you can just pop it in the oven in the morning. A family favorite. You can easily double the recipe and make in a 13x9 inch dish.

Ingredients

  • 8 ounces bulk pork sausage
  • 4 - eggs
  • 3/4 cup milk
  • 6 cups high quality white sandwich bread-cut in cubes
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup picante sauce or chunky salsa

How To Make fiesta breakfast casserole

  • Step 1
    Cook sausage until browned, pour off fat.
  • Step 2
    Arrange sausage in 2-quart shallow baking dish. Top with bread cubes and cheese. Mix picante sauce, eggs and milk and pour over all. Cover and refrigerate overnight (or at least 3 hours.
  • Step 3
    Uncover. Bake at 350 degrees for 45 minutes or until done. Serve with sour cream and salsa or picante sauce on the side.
