Works best to make it up the night before so you can just pop it in the oven in the morning. A family favorite. You can easily double the recipe and make in a 13x9 inch dish.

Ingredients

  • 8 oz
    bulk pork sausage
  • 4
    eggs
  • 3/4 c
    milk
  • 6 c
    high quality white sandwich bread-cut in cubes
  • 1 1/2 c
    shredded cheddar cheese
  • 1 c
    picante sauce or chunky salsa

How to Make Fiesta Breakfast Casserole

Step-by-Step

  1. Cook sausage until browned, pour off fat.
  2. Arrange sausage in 2-quart shallow baking dish. Top with bread cubes and cheese. Mix picante sauce, eggs and milk and pour over all. Cover and refrigerate overnight (or at least 3 hours.
  3. Uncover. Bake at 350 degrees for 45 minutes or until done. Serve with sour cream and salsa or picante sauce on the side.
