A winning combination for a delicious hearty breakfast for holidays, family gatherings or a special breakfast at home. Prepare the casserole the night before serving and pop it in the oven while coffee is brewing the following morning.

Ingredients

  • 3 cups simply potato hash browns or south west flavored diced potatoes
  • 1 cup diced ham
  • 2 cups montery jack cheese
  • 1 bunch scallions - chopped
  • 4 - eggs- beaten
  • 1 can evaporated milk
  • 3/4 cup sweet red pepper
  • 1/2 teaspoon thyme, dried

How To Make farmers breakfast casserole

  • Step 1
    Grease a casserole dish Place bag of simply potatoes on bottom of casserole, flatten with fingers to make a crust of sorts in the pan
  • Step 2
    Cover potatoes with ham cubes,red pepper, scallions and 1 1/2 cups of cheese
  • Step 3
    Combine the eggs with evaporated milk and thyme pour over vegtables and meat. Cover tightly and place in fridge over night.
  • Step 4
    Bake in preheated 350 oven for 45-50 minutes UNCOVERED or until set Let cool in casserole for 10-15 minutes before slicing Enjoy!
