- 3 cups simply potato hash browns or south west flavored diced potatoes
- 1 cup diced ham
- 2 cups montery jack cheese
- 1 bunch scallions - chopped
- 4 - eggs- beaten
- 1 can evaporated milk
- 3/4 cup sweet red pepper
- 1/2 teaspoon thyme, dried
How To Make farmers breakfast casserole

Step 1Grease a casserole dish Place bag of simply potatoes on bottom of casserole, flatten with fingers to make a crust of sorts in the pan

Step 2Cover potatoes with ham cubes,red pepper, scallions and 1 1/2 cups of cheese

Step 3Combine the eggs with evaporated milk and thyme pour over vegtables and meat. Cover tightly and place in fridge over night.

Step 4Bake in preheated 350 oven for 45-50 minutes UNCOVERED or until set Let cool in casserole for 10-15 minutes before slicing Enjoy!
