How to Make Eggs with Mushrooms and Spinach
- Preheat oven to 400 degrees. Prepare 4 ramekin dishes with a teaspoon of olive oil in the bottom of each one.
- Add mushrooms, spinach, and 2 eggs (making a little dent for the eggs) in each dish.
Salt and pepper the tops of the eggs.
Places dishes on a sheet pan and cover with parchment or foil.
- Bake until the egg white are set and done to your liking..about 15 minutes. Uncover the last couple of minutes.
- As I said you can change this recipe to your desire. I added a bit of chopped onion to the mushrooms, and I put some cheese on top of the spinach before cracking the eggs on top. You can also add a bit of chopped ham, or cooked chopped bacon to each dish. Enjoy!
