eggs with mushrooms and spinach
This is a nice brunch meal. I got the recipe in a magazine but have changed it for our tastes. You can add or subtract things to your tastes.

Ingredients
- 4 teaspoons olive oil
- 1 box chopped frozen spinach, thawed and squeezed dry
- 8 ounces cremini mushrooms, coarsely chopped
- 8 large eggs
- - coarse salt and ground pepper
How To Make eggs with mushrooms and spinach

Step 1Preheat oven to 400 degrees. Prepare 4 ramekin dishes with a teaspoon of olive oil in the bottom of each one.

Step 2Add mushrooms, spinach, and 2 eggs (making a little dent for the eggs) in each dish. Salt and pepper the tops of the eggs. Places dishes on a sheet pan and cover with parchment or foil.

Step 3Bake until the egg white are set and done to your liking..about 15 minutes. Uncover the last couple of minutes.

Step 4As I said you can change this recipe to your desire. I added a bit of chopped onion to the mushrooms, and I put some cheese on top of the spinach before cracking the eggs on top. You can also add a bit of chopped ham, or cooked chopped bacon to each dish. Enjoy!
