Eggs with Mushrooms and Spinach

- olive oil
- 1 box
- chopped frozen spinach, thawed and squeezed dry
- 8 oz
- cremini mushrooms, coarsely chopped
- 8 large
- coarse salt and ground pepper
Salt and pepper the tops of the eggs.
Places dishes on a sheet pan and cover with parchment or foil.
