this is a great dish to serve for breakfast i sometimes take it to the church on saturday for the prayer group and they love this

  • 1 lb
    sage flavored breakfast sausage
  • 3 c
    shredded potatoes (drained and press)
  • 1/4 c
    butter, melted
  • 12 oz
    mild shredded cheddar cheese
  • 1/2 c
    onion finely diced
  • 16 oz
    container small curd cottage cheese
  • 6 large

How to Make Eggs And Sausage Casserole


  1. preheat oven to 375 and lightly grease a 9x13 inch casserole dish.
  2. brown sausage in a skillet over medium heat.
  3. in a bowl, mix together the melted butter and shredded potatoes, then line them in the bottom and the sides of the casserole dish.
  4. in a bowl, mix the sausage, cheddar cheese, onion, cottage cheese and eggs. pour over the potato mixture.
  5. bake for 1 hour or until a toothpick inserted into center of the casserole comes out clean. let cool for 5 minutes before serving.
