This hearty egg and potato breakfast has a few steps, but it is a very easy breakfast recipe. Breakfast bowls are very popular, and this will beat anything you'd find at your favorite breakfast restaurant. Onions and diced potatoes are cooked in butter until tender and browned. Then, cubed ham is fried to add heartiness and a savory touch. A hefty sprinkle of grated cheddar cheese and a big dollop of sour cream add a touch of decadence. Topped with an over-easy egg, it's a wonderful weekend breakfast, brunch idea, or breakfast for dinner option. This is an egg breakfast recipe you'll find yourself making again and again.

Ingredients
- 1 stick butter
- 1 medium onion
- 3 large baking potatoes
- 1 teaspoon garlic salt
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 2 cups chopped ham
- 3 cups grated cheddar cheese
- 8 large eggs
- 1 cup sour cream
How To Make eggs and potato breakfast

Step 1Melt butter in a frying pan. Add onions to the pan and cook until soft.

Step 2Cut up potatoes into bite-sized pieces and add to the onions. Sprinkle with garlic salt, pepper, and paprika.

Step 3Cook the potatoes and onion in the pan.

Step 4While that is browning, take chopped ham and fry it in a separate pan. Set aside.

Step 5In a shallow bowl or plate, layer potatoes and then the ham.

Step 6Top with cheese and cover with foil so the cheese will melt while you cook the eggs.

Step 7Cook eggs any way you like in the pan that you cooked the ham in. (I prefer my eggs over-easy.)

Step 8Place two eggs on top of the cheese.

Step 9Top with a little sour cream.
