Ingredients

1 lbsausage, i like jimmy dean w/ sage

10eggs
-
1 cmilk
-
1/2 cfeta cheese
-
1/2 cparmesan regiano cheese
-
4 Tbspbasil, fresh
-
1/2 cbaby spinach, fresh
-
8-10shallots or 1 large white onion
-
6pegs garlic
-
1 1/2 tsppepper, freshly ground
-
1 Tbsponion powder
-
1 Tbspgarlic powder
-
2 Tbspmccormick garlic & herb seasoning, (no salt)

GARNISH: ON SIDE OF PLATES
-
·avocado slices
-
·chopped tomatoes
-
·sour cream
How to Make EGG & SAUSAGE FRITATTA
- Cook SAUSAGE, & drain well.
I cook it in microwave.
Place between napkins and press out the extra oil. - Peel & chop SHALLOTS or ONIONS.
Smash GARLIC, peel & chop into very fine pieces. - Rinse BASIL leaves, chop.
Remove stems, rinse SPINACH and chop. - Beat EGGS and MILK together.
Add SPICES & beat well.
Stir in all other ingredients. - Spray 2 baking dishes divide egg mixture evenly.
Do NOT cover.
Bake 350 30 - 40 minutes.
