I got the idea when we visited a B&B, their recipe was very basic just eggs, & cheese! I added a LOT of stuff to it and made it my own.

Ingredients

  • 1 pound sausage, i like jimmy dean w/ sage
  • 10 - eggs
  • 1 cup milk
  • 1/2 cup feta cheese
  • 1/2 cup parmesan regiano cheese
  • 4 tablespoons basil, fresh
  • 1/2 cup baby spinach, fresh
  • 8-10 - shallots or 1 large white onion
  • 6 - pegs garlic
  • 1 1/2 teaspoons pepper, freshly ground
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2 tablespoons mccormick garlic & herb seasoning, (no salt)
  • GARNISH: ON SIDE OF PLATES
  • - avocado slices
  • - chopped tomatoes
  • - sour cream

How To Make egg & sausage fritatta

  • Step 1
    Cook SAUSAGE, & drain well. I cook it in microwave. Place between napkins and press out the extra oil.
  • Step 2
    Peel & chop SHALLOTS or ONIONS. Smash GARLIC, peel & chop into very fine pieces.
  • Step 3
    Rinse BASIL leaves, chop. Remove stems, rinse SPINACH and chop.
  • Step 4
    Beat EGGS and MILK together. Add SPICES & beat well. Stir in all other ingredients.
  • Step 5
    Spray 2 baking dishes divide egg mixture evenly. Do NOT cover. Bake 350 30 - 40 minutes.
