I got the idea when we visited a B&B, their recipe was very basic just eggs, & cheese! I added a LOT of stuff to it and made it my own.

Ingredients

1 lb
sausage, i like jimmy dean w/ sage
10
eggs
1 c
milk
1/2 c
feta cheese
1/2 c
parmesan regiano cheese
4 Tbsp
basil, fresh
1/2 c
baby spinach, fresh
8-10
shallots or 1 large white onion
6
pegs garlic
1 1/2 tsp
pepper, freshly ground
1 Tbsp
onion powder
1 Tbsp
garlic powder
2 Tbsp
mccormick garlic & herb seasoning, (no salt)

GARNISH: ON SIDE OF PLATES

avocado slices
chopped tomatoes
sour cream

How to Make EGG & SAUSAGE FRITATTA

Step-by-Step

  • 1Cook SAUSAGE, & drain well.
    I cook it in microwave.
    Place between napkins and press out the extra oil.
  • 2Peel & chop SHALLOTS or ONIONS.
    Smash GARLIC, peel & chop into very fine pieces.
  • 3Rinse BASIL leaves, chop.
    Remove stems, rinse SPINACH and chop.
  • 4Beat EGGS and MILK together.
    Add SPICES & beat well.
    Stir in all other ingredients.
  • 5Spray 2 baking dishes divide egg mixture evenly.
    Do NOT cover.
    Bake 350 30 - 40 minutes.
