Easy Peasy Pico Frittata
6eggs, 2 yolks removed, if desired
1/2 cpico de gallo, fresh
1/2 cmilk, low-fat
1 ccheddar/jack cheese, shredded & divided in half
·salt & pepper, to taste
TOPPING / GARNISH
2-4 Tbspsour cream
2-4 Tbspsalsa, my favorite - pace picante sauce, medium hot
How to Make Easy Peasy Pico Frittata
- Crack 6 eggs and put in medium bowl, separate 2 of the eggs, removing 2 yolks and discard. You may use all 6 if you like, I just cut down the calories and cholesterol by eliminating 2 yolks.
- Add 1/2 cup milk to the eggs and beat until blended.
Add 1/2 cup cheese.
- Add fresh pico de gallo (tomatoes,yellow onion, jalapeno & cilantro). I had store bought, prepackaged fresh pico for fast easy use.
Stir to mix all ingredients.
