easy peasy pico frittata
I just made this creation this morning! It was so easy to make, hence the name and so delicious! I just had to share it!

Ingredients
- 6 - eggs, 2 yolks removed, if desired
- 1/2 cup pico de gallo, fresh
- 1/2 cup milk, low-fat
- 1 cup cheddar/jack cheese, shredded & divided in half
- - salt & pepper, to taste
- TOPPING / GARNISH
- 2-4 tablespoons sour cream
- 2-4 tablespoons salsa, my favorite - pace picante sauce, medium hot
- 1 - avocado
How To Make easy peasy pico frittata

Step 1Crack 6 eggs and put in medium bowl, separate 2 of the eggs, removing 2 yolks and discard. You may use all 6 if you like, I just cut down the calories and cholesterol by eliminating 2 yolks.

Step 2Add 1/2 cup milk to the eggs and beat until blended. Add 1/2 cup cheese.

Step 3Add fresh pico de gallo (tomatoes,yellow onion, jalapeno & cilantro). I had store bought, prepackaged fresh pico for fast easy use. Stir to mix all ingredients.

Step 4Pour egg mixture into a greased pan or baking dish and bake for 20 minutes. Remove from oven and add the other 1/2 cup cheese to the top. Place back in oven for 5 minutes to melt the cheese.

Step 5Garnish with sour cream, avocado and salsa. Enjoy!
