eggs, 2 yolks removed, if desired
pico de gallo, fresh
cheddar/jack cheese, shredded & divided in half

salsa, my favorite - pace picante sauce, medium hot
How to Make Easy Peasy Pico Frittata
1Crack 6 eggs and put in medium bowl, separate 2 of the eggs, removing 2 yolks and discard. You may use all 6 if you like, I just cut down the calories and cholesterol by eliminating 2 yolks.
2Add 1/2 cup milk to the eggs and beat until blended.
Add 1/2 cup cheese.
3Add fresh pico de gallo (tomatoes,yellow onion, jalapeno & cilantro). I had store bought, prepackaged fresh pico for fast easy use.
Stir to mix all ingredients.
4Pour egg mixture into a greased pan or baking dish and bake for 20 minutes. Remove from oven and add the other 1/2 cup cheese to the top. Place back in oven for 5 minutes to melt the cheese.
5Garnish with sour cream, avocado and salsa. Enjoy!
