If you're cooking for a crowd, this recipe fits the bill! Great for a holiday morning! Optionally, you add sauteed mushrooms. If you don't like crustless quiches, you can add a crust.

Ingredients

  • 7 eggs
  • 3/4 cup milk
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon unsalted butter
  • 2 teaspoons olive oil
  • 1 medium sweet onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 6 ounces ham, diced
  • 1 cup spinach, chopped
  • 1 cup sharp cheddar cheese, grated

How To Make denver "omelette" quiche

  • Step 1
    Butter a 9 inch deep dish pie pan. (or can use spray). Preheat oven to 375F.
  • Step 2
    Place the eggs, milk, salt, pepper and red pepper in a bowl. Whisk to combine. Set aside.
  • Step 3
    In a large skillet, melt the butter. Add the olive oil. Heat and then add the onions and bell peppers. Saute for about 4 minutes, until softened. Scrape into a large bowl.
  • Step 4
    Add the ham, spinach, and cheese to the pepper mixture. Stir to combine. Add the egg mixture. stir to combine. Pour into the prepared pie dish.
  • Step 5
    Bake, uncovered for about 60 minutes, until the eggs are set. If it begins to brown too much, tent with foil.
  • Step 6
    Remove from oven and let rest for 5-10 minutes before slicing. Can garnish with green onions and sour cream.
