denver "omelette" quiche
If you're cooking for a crowd, this recipe fits the bill! Great for a holiday morning! Optionally, you add sauteed mushrooms. If you don't like crustless quiches, you can add a crust.

Ingredients
- 7 eggs
- 3/4 cup milk
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 1 tablespoon unsalted butter
- 2 teaspoons olive oil
- 1 medium sweet onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 6 ounces ham, diced
- 1 cup spinach, chopped
- 1 cup sharp cheddar cheese, grated
How To Make denver "omelette" quiche

Step 1Butter a 9 inch deep dish pie pan. (or can use spray). Preheat oven to 375F.

Step 2Place the eggs, milk, salt, pepper and red pepper in a bowl. Whisk to combine. Set aside.

Step 3In a large skillet, melt the butter. Add the olive oil. Heat and then add the onions and bell peppers. Saute for about 4 minutes, until softened. Scrape into a large bowl.

Step 4Add the ham, spinach, and cheese to the pepper mixture. Stir to combine. Add the egg mixture. stir to combine. Pour into the prepared pie dish.

Step 5Bake, uncovered for about 60 minutes, until the eggs are set. If it begins to brown too much, tent with foil.

Step 6Remove from oven and let rest for 5-10 minutes before slicing. Can garnish with green onions and sour cream.
