Ingredients

  • 8 ounces asparagus (cut in 1" pieces and cooked)
  • 6 large eggs
  • 2-1/4 cup shredded mozzarella cheese, reserve 1/4 c.
  • 2 cloves garlic
  • - salt & pepper to taste
  • 2 cups baby spinach leaves
  • 2 tablespoons parmesan cheese, canned grated

How To Make crustless asparagus quiche

  • Cut asparagus and cook in microwave
    Step 1
    Grease a 9-inch pie pan. Microwave asparagus pieces until cooked.
  • Step 2
    Beat all six eggs and reserve 1/4 cup.
  • Step 3
    Combine eggs, 2 cups mozzarella, garlic, salt, pepper, and spinach. Pour into prepared pie pan.
  • Top with mozzarella and parmesan cheese.
    Step 4
    Layer asparagus on top of egg mixture in pan. Pour reserve 1/4 cup egg on top. Sprinkle remaining 1/4 cup mozzarella and parmesan cheese on top.
  • Crustless Asparagus Quiche
    Step 5
    Bake at 375 degrees F for about 30 minutes or until edges start to brown.
