  • 8 oz
    asparagus (cut in 1" pieces and cooked)
  • 6 large
  • 2-1/4 c
    shredded mozzarella cheese, reserve 1/4 c.
  • 2 clove
  • ·
    salt & pepper to taste
  • 2 c
    baby spinach leaves
  • 2 Tbsp
    parmesan cheese, canned grated

How to Make Crustless Asparagus Quiche


  1. Grease a 9-inch pie pan. Microwave asparagus pieces until cooked.
  2. Beat all six eggs and reserve 1/4 cup.
  3. Combine eggs, 2 cups mozzarella, garlic, salt, pepper, and spinach. Pour into prepared pie pan.
  4. Layer asparagus on top of egg mixture in pan. Pour reserve 1/4 cup egg on top. Sprinkle remaining 1/4 cup mozzarella and parmesan cheese on top.
  5. Bake at 375 degrees F for about 30 minutes or until edges start to brown.
