- 8 ounces asparagus (cut in 1" pieces and cooked)
- 6 large eggs
- 2-1/4 cup shredded mozzarella cheese, reserve 1/4 c.
- 2 cloves garlic
- - salt & pepper to taste
- 2 cups baby spinach leaves
- 2 tablespoons parmesan cheese, canned grated
How To Make crustless asparagus quiche

Step 1Grease a 9-inch pie pan. Microwave asparagus pieces until cooked.

Step 2Beat all six eggs and reserve 1/4 cup.

Step 3Combine eggs, 2 cups mozzarella, garlic, salt, pepper, and spinach. Pour into prepared pie pan.

Step 4Layer asparagus on top of egg mixture in pan. Pour reserve 1/4 cup egg on top. Sprinkle remaining 1/4 cup mozzarella and parmesan cheese on top.

Step 5Bake at 375 degrees F for about 30 minutes or until edges start to brown.
