Ingredients

32 ounce frozen hash brown potatoes
1 lb
bacon, diced cooked and drained or 1 pound cooked ham cubed
1 medium
diced onion
1 small
green pepper diced
1 1/2 c
shredded cheddar or monterrey jack cheese
1
dozen eggs
1 c
milk
1 tsp
salt
1 tsp
pepper

How to Make Crockpot Western Omelet Casserole

Step-by-Step

  • 1Place layer of frozen potatoes on the bottom ot the slow cooker, followed by a layer of bacon, the onions, greenpepper and cheese.
  • 2Repeat the layering process two or three more times, ending with a layer of cheese.
  • 3Beat the eggs, milk,salt, and pepper together. Pour over the crockpot mixture.
  • 4Cover and turn on low. Cook for 10-12 hours.
