Ingredients

  • 2 Tbsp
    dijon mustard
  • 6
    English Muffins
  • 8 oz
    can crabmeat, drained
  • 2 Tbsp
    lemon juice
  • 2 tsp
    lemon zest
  • 2 c
    (8 oz.) pkg. shredded white cheddar cheese
  • 12
    eggs
  • 1 c
    half and half cream
  • 1 c
    milk, 2%
  • 1/2 c
    mayonnaise
  • 1 tsp
    salt
  • 1/2 tsp
    cayenne pepper
  • 1/2 tsp
    pepper
  • 2 c
    (8 oz.) pkg. shredded swiss cheese
  • 1 c
    grated Parmesan cheese
  • 4
    green onions, chopped
  • 1/4 c
    red bell pepper finely chopped
  • 1/4 c
    yellow bell pepper finely chopped

How to Make Crabby Patty Brunch Bake

Step-by-Step

  1. Spread mustard over bottom half of muffins. Place in a greased 9x13" baking dish. Top with crab, lemon juice and peel. Sprinkle with cheddar cheese. Top with muffin tops; set aside.
  2. In a large mixing bowl, whisk the eggs, cream, milk, mayonaise, salt, cayenne and pepper. Pour over muffins; sprinkle with swiss cheese, parmesan cheese, onions and peppers. Cover and refrigerate overnight!
  3. Remove from the refrigerator 30 min. before baking. Cover and bake at 375* for 30 min. Uncover; bake 20-25 min. longer or until set. Let stand 5 minutes before serving... Enjoy!
