I found a similar recipe in a magazine, but I reduced the fat in it to make it more diet friendly.

Ingredients
- 1 box cornbread mix (about 8 ounces)
- 2 cups milk, any variety
- 6 eggs
- 1 teaspoon salt
- 1/2 cup grated cheddar cheese, or mexican blend
- 1/4 cup real bacon bits
- 1/4 cup pickled jalapeno slices, chopped
- 3 stalks green onion, chopped (white and green part)
How To Make cornbread breakfast casserole

Step 1Spray a 9x13 pan with Pam or equivalent. Preheat oven to 350ºF.

Step 2In a large bowl, mix together cornbread mix with milk. Add eggs and salt. Stir until blended.

Step 3Add cheese, bacon bits, jalapeños and onions. Stir til combined. Spread into prepared pan. Bake for 20 -30 minutes until set and center is slightly puffed. Let rest for a few minutes until cutting and serving.
