Just something I came up with one morning for a Sunday brunch. You can certainly use "real" onions if you desire, but I don't care for them at all. It's my kitchen and I'm cooking and it's done my way :) Ha!

Ingredients

  • 1/2 pound maple flavored jimmy dean sausage
  • 4 - eggs
  • - diced green pepper
  • - diced red pepper
  • 4 cups frozen hashbrowns
  • 1/2 cup shredded cheddar cheese
  • dash onion powder
  • 1 tablespoon milk
  • - salt & pepper to taste
  • - oil or butter for cooking

How To Make claimstake scramble

  • Step 1
    Crumble and brown sausage and drain off fat. Set aside in bowl lined with paper towels.
  • Step 2
    Place frozen hash browns in skillet with oil or butter. Cook until nearly done and crispy on the outside.
  • Step 3
    Add red and green peppers, and onion powder. Gently cook until hash browns are cooked all the way through.
  • Step 4
    Preheat oven to 350* while cooking hash browns.
  • Step 5
    Add maple sausage to potatoes and place in casserole dish and put in oven to keep warm.
  • Step 6
    Mix eggs and milk, scramble eggs in skillet.
  • Step 7
    Add eggs to casserole, top with cheddar cheese and warm until cheese is melted.
