claimstake scramble
Just something I came up with one morning for a Sunday brunch. You can certainly use "real" onions if you desire, but I don't care for them at all. It's my kitchen and I'm cooking and it's done my way :) Ha!

Ingredients
- 1/2 pound maple flavored jimmy dean sausage
- 4 - eggs
- - diced green pepper
- - diced red pepper
- 4 cups frozen hashbrowns
- 1/2 cup shredded cheddar cheese
- dash onion powder
- 1 tablespoon milk
- - salt & pepper to taste
- - oil or butter for cooking
How To Make claimstake scramble

Step 1Crumble and brown sausage and drain off fat. Set aside in bowl lined with paper towels.

Step 2Place frozen hash browns in skillet with oil or butter. Cook until nearly done and crispy on the outside.

Step 3Add red and green peppers, and onion powder. Gently cook until hash browns are cooked all the way through.

Step 4Preheat oven to 350* while cooking hash browns.

Step 5Add maple sausage to potatoes and place in casserole dish and put in oven to keep warm.

Step 6Mix eggs and milk, scramble eggs in skillet.

Step 7Add eggs to casserole, top with cheddar cheese and warm until cheese is melted.
