This is great for that left-over ham from the holidays.

  • 1/4 c
    canola oil
  • 2 c
    refrigerated hash brown potatoes
  • 8 large
  • 1 c
    diced, cooked ham
  • 1/2 tsp
    each, salt and pepper
  • 1
    green bell pepper, chopped
  • 1/2 c
    chopped onion
  • 1 c
    reduced-fat, shredded cheddar cheese

How to Make Cheesy ham fritatta


  1. Heat oil in lg skillet over high heat. Add potatoes to skillet. Cook, stirring for 15 mins, or until potatoes are tender.
  2. In lg bowl, whisk together eggs, ham, salt and pepper. Stir in green bell pepper and onion. Pour mix over potatoes. Reduce heat to medium.
  3. Cover, cook about 10 mins, or until eggs are set. Sprinkle w/ cheese. Cook until cheese is melted. Cut into wedges.
