This is great for that left-over ham from the holidays.

Ingredients

  • 1/4 cup canola oil
  • 2 cups refrigerated hash brown potatoes
  • 8 large eggs
  • 1 cup diced, cooked ham
  • 1/2 teaspoon each, salt and pepper
  • 1 - green bell pepper, chopped
  • 1/2 cup chopped onion
  • 1 cup reduced-fat, shredded cheddar cheese

How To Make cheesy ham fritatta

  • Step 1
    Heat oil in lg skillet over high heat. Add potatoes to skillet. Cook, stirring for 15 mins, or until potatoes are tender.
  • Step 2
    In lg bowl, whisk together eggs, ham, salt and pepper. Stir in green bell pepper and onion. Pour mix over potatoes. Reduce heat to medium.
  • Step 3
    Cover, cook about 10 mins, or until eggs are set. Sprinkle w/ cheese. Cook until cheese is melted. Cut into wedges.
