~ cheesy green chile egg breakfast ~ low carb

A recipe that I came up with, as I continue my low carb way of life! I wanted something with a little bite to it...savory and something easy and satisfying any time of the day! My family even loves them. Add your favorite spices, I just added salt and some red pepper flakes for added heat. Make it your own!

Ingredients

  • 1 - 10 ounces can, whole chiles chopped or already chopped chiles
  • 6 large eggs
  • 1/2 - onion, chopped small
  • 2 tablespoons red bell pepper, chopped
  • Salt - and pepper to taste
  • Red - pepper flakes to taste - optional
  • 8 ounces fresh shredded colby jack cheese

How To Make ~ cheesy green chile egg breakfast ~ low carb

  • Step 1
    Preheat oven to 325 degree F. Spray a 9 inch dish with non stick cooking spray. In a bowl, beat eggs, add red pepper, seasonings, onion. Spread chilies on bottom of dish.
  • Step 2
    Pour egg mixture over chilies.
  • Step 3
    Sprinkle evenly with cheese.
  • Step 4
    Bake 25 - 30 minutes or until egg is puffed around the edges and cooked in center.
  • Step 5
    Cut and serve with salsa! Add more salt if needed.
