A recipe that I came up with, as I continue my low carb way of life! I wanted something with a little bite to it...savory and something easy and satisfying any time of the day! My family even loves them. Add your favorite spices, I just added salt and some red pepper flakes for added heat. Make it your own!

  • 1 - 10 oz
    can, whole chiles chopped or already chopped chiles
  • 6 large
  • 1/2
    onion, chopped small
  • 2 Tbsp
    red bell pepper, chopped
  • Salt
    and pepper to taste
  • Red
    pepper flakes to taste - optional
  • 8 oz
    fresh shredded colby jack cheese

How to Make ~ Cheesy Green Chile Egg Breakfast ~ Low Carb


  1. Preheat oven to 325 degree F.

    Spray a 9 inch dish with non stick cooking spray.

    In a bowl, beat eggs, add red pepper, seasonings, onion.

    Spread chilies on bottom of dish.
  2. Pour egg mixture over chilies.
  3. Sprinkle evenly with cheese.
  4. Bake 25 - 30 minutes or until egg is puffed around the edges and cooked in center.
  5. Cut and serve with salsa! Add more salt if needed.
