~ cheesy green chile egg breakfast ~ low carb
A recipe that I came up with, as I continue my low carb way of life! I wanted something with a little bite to it...savory and something easy and satisfying any time of the day! My family even loves them. Add your favorite spices, I just added salt and some red pepper flakes for added heat. Make it your own!

Ingredients
- 1 - 10 ounces can, whole chiles chopped or already chopped chiles
- 6 large eggs
- 1/2 - onion, chopped small
- 2 tablespoons red bell pepper, chopped
- Salt - and pepper to taste
- Red - pepper flakes to taste - optional
- 8 ounces fresh shredded colby jack cheese
How To Make ~ cheesy green chile egg breakfast ~ low carb

Step 1Preheat oven to 325 degree F. Spray a 9 inch dish with non stick cooking spray. In a bowl, beat eggs, add red pepper, seasonings, onion. Spread chilies on bottom of dish.

Step 2Pour egg mixture over chilies.

Step 3Sprinkle evenly with cheese.

Step 4Bake 25 - 30 minutes or until egg is puffed around the edges and cooked in center.

Step 5Cut and serve with salsa! Add more salt if needed.
