Cheesy Breakfast Casserole
2 pkg12 oz. ea. breakfast sausage links
6english muffins, cut into 1-in. cubes
1/4 cbutter, melted
1 ccheddar cheese, shredded
1 cmozzarella cheese, shredded
1/2 conion, chopped
·salt & pepper to taste.
1/4 cbacon bits
·red or green pepper opt.
How to Make Cheesy Breakfast Casserole
- Cook Sausage according to pkg. directions. Cool slightly; cut into 1/4-in. slices. In a greased 13x9 in baking dish, layer half the English muffin cubes & half the cooked sausage. Repeat layers~!
- Drizzle with butter & top with the cheese, onion, (this is where I added some ham or bacon.)
- In a lg. bowl, combine the eggs, milk, salt & pepper. Pour over casserole. Sprinkle with Bacon.
- Cover & refrigerate overnite.
Remove from the refrigerator 30 min. before baking. Uncover and bake at 350 degrees for 45-50 min., or until knife inserted into the center comes out clean.
Let stand 5 min.
