This breakfast casserole is easy, & makes a wonderful Easter Mornin' breakfast. or for that matter .."any" mornin' breakfast... Smiles.

Ingredients

  • 2 packages 12 oz. ea. breakfast sausage links
  • 6 - english muffins, cut into 1-in. cubes
  • 1/4 cup butter, melted
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup onion, chopped
  • 12 - lg. eggs
  • 2 cups milk
  • - salt & pepper to taste.
  • 1/4 cup bacon bits
  • - red or green pepper opt.

How To Make cheesy breakfast casserole

  • Step 1
    Cook Sausage according to pkg. directions. Cool slightly; cut into 1/4-in. slices. In a greased 13x9 in baking dish, layer half the English muffin cubes & half the cooked sausage. Repeat layers~!
  • Step 2
    Drizzle with butter & top with the cheese, onion, (this is where I added some ham or bacon.)
  • Step 3
    In a lg. bowl, combine the eggs, milk, salt & pepper. Pour over casserole. Sprinkle with Bacon.
  • Step 4
    Cover & refrigerate overnite. Remove from the refrigerator 30 min. before baking. Uncover and bake at 350 degrees for 45-50 min., or until knife inserted into the center comes out clean. Let stand 5 min.
