So easy! One bowl dish! Great way to serve eggs for many people at breakfast or even brunch! Serve with hot buttered toast and bacon! Don't forget the mimosas!

  • 3 Tbsp
    butter, melted
  • 5
    eggs, large beaten
  • 1 c
    cottage cheese
  • 1/2 c
    shredded cheddar cheese
  • 4 oz
    can diced can green chiles (ethnic isle grocery store)
  • 1/4 c
  • 1/2 tsp
    baking powder
  • ·
    pinch of salt and pepper to taste

How to Make Cheddar and Chile Egg Bake


  1. Preheat oven to 350. Brush an 8 inch square baking dish with 1 T melted butter
  2. Whisk together remaining ingredients. Pour into baking dish and bake until set, approximately 35 minutes.
