1Cut bread into 3/4" cubes to make 12 cups.In bowl, toss together cubes, 2 c. of cheese, green pepper & ham; arrange in greased 13x9" glass baking dish.
2Whisk together eggs, milk, mustard, salt & half pepper; pour over bread mixture. Cover & refrigerate, spooning egg mixture over bread mixture occasionally, for 12 hours.
3In bowl, toss together tomatoes, oil & remaining pepper; spoon over bread mixture. Sprinkle with remaining cheese. Bake in 375 oven for 40-45 minutes or until puffed and golden. Sprinkle with parsley.
