Ingredients

1 1/2 lb
ground beef
1
onion, finely chopped
2 Tbsp
olive oil
2
garlic cloves, minced
4 oz
mushrooms, drained
2 tsp
salt
1/2 tsp
nutmeg
1/2 tsp
oregano
1/2 pkg
spinach, chopped, frozen
3 Tbsp
flour
6
eggs, beaten
1/4 c
milk, scalded
1/2 c
cheddar cheese, grated

How to Make Brunch Casserole

Step-by-Step

  • 1In skillet, lightly brown ground beef and onion in olive oil.
  • 2Drain well.
  • 3Place in well-greased crock-pot.
  • 4Stir in remaining ingredients except eggs, milk and cheese until well blended.
  • 5Beat eggs and milk together.
  • 6Pour over other ingredients.
  • 7Stir well.
  • 8Dust with additional nutmeg.
  • 9Cover and cook on low setting for 7 to 10 hours or until firm.
  • 10Just before serving, sprinkle with grated cheese.
