This is an easy, one pan breakfast dish. There are no rules, feel free to substitute whatever you have on hand.

Ingredients

  • 2 - cans of sliced potatoes (you can use any potatoes you have-i've used leftover baked potatoes diced)
  • 1/2 - small onion, diced (or minced, dry onions)
  • 2 tablespoons butter or margarine
  • 1 - dozen eggs, beaten
  • 1 1/2 cups shredded cheddar cheese
  • - bacon, ham or sausage (optional)
  • - salt & pepper to taste

How To Make breakfast scramble

  • Step 1
    Melt butter in a large skillet.
  • Step 2
    Saute onion and potato until onion is cooked through.
  • Step 3
    Add eggs to potato & onions (if skillet seems dry, add a touch more butter before adding eggs)
  • Step 4
    Stir eggs to scramble.
  • Step 5
    If adding meat, add already cooked meat when eggs are almost finished.
  • Step 6
    Add cheese to the skillet for the last minute of cooking, so it has a chance to melt.
  • Step 7
    Serve with biscuits or toast.
