This is an easy, one pan breakfast dish. There are no rules, feel free to substitute whatever you have on hand.

Ingredients

  • 2
    cans of sliced potatoes (you can use any potatoes you have-i've used leftover baked potatoes diced)
  • 1/2
    small onion, diced (or minced, dry onions)
  • 2 Tbsp
    butter or margarine
  • 1
    dozen eggs, beaten
  • 1 1/2 c
    shredded cheddar cheese
  • ·
    bacon, ham or sausage (optional)
  • ·
    salt & pepper to taste

How to Make Breakfast Scramble

Step-by-Step

  1. Melt butter in a large skillet.
  2. Saute onion and potato until onion is cooked through.
  3. Add eggs to potato & onions (if skillet seems dry, add a touch more butter before adding eggs)
  4. Stir eggs to scramble.
  5. If adding meat, add already cooked meat when eggs are almost finished.
  6. Add cheese to the skillet for the last minute of cooking, so it has a chance to melt.
  7. Serve with biscuits or toast.
