This is an easy, one pan breakfast dish. There are no rules, feel free to substitute whatever you have on hand.

Ingredients

2
cans of sliced potatoes (you can use any potatoes you have-i've used leftover baked potatoes diced)
1/2
small onion, diced (or minced, dry onions)
2 Tbsp
butter or margarine
1
dozen eggs, beaten
1 1/2 c
shredded cheddar cheese
bacon, ham or sausage (optional)
salt & pepper to taste

How to Make Breakfast Scramble

Step-by-Step

  • 1Melt butter in a large skillet.
  • 2Saute onion and potato until onion is cooked through.
  • 3Add eggs to potato & onions (if skillet seems dry, add a touch more butter before adding eggs)
  • 4Stir eggs to scramble.
  • 5If adding meat, add already cooked meat when eggs are almost finished.
  • 6Add cheese to the skillet for the last minute of cooking, so it has a chance to melt.
  • 7Serve with biscuits or toast.
